Dr. Niki Davis is a versatile professional bridging the worlds of tourism education, food, and technology. As Professor of Practice and Director of the Hospitality, Tourism, and Event Management program at Southern Illinois University, she shapes the future of tourism by preparing students for this ever-changing industry. Her teaching integrates technology, including generative AI, and emphasizes practical application, particularly in marketing.
A former President of the International Society of Travel and Tourism Educators, Niki demonstrates exceptional leadership in shaping tourism education. She actively collaborates with local organizations to promote tourism in Southern Illinois, emphasizing the crucial link between industry and the classroom.
Food Writing
Beyond academia, Niki is a passionate food writer and culinary enthusiast. Under her "Rooted in Foods" platform, she explores the intersection of food, family, and heritage, emphasizing the power of food to connect cultures and generations. Her dedication to preserving culinary heritage is reflected in her writing, which has been featured in numerous publications, including The Southern Illinoisan, St. Louis Post Dispatch, Napa Valley Register, and Missoulian, as well as on radio and television programs like KMOX St. Louis, Illinois Public Media’s The 21st Show, and WSIU In Focus. She is also co-editor of the cookbook Food, Fun & Folks, celebrating Southern Illinois food heritage.
Niki shares her culinary expertise through cooking demonstrations at farmers' markets and workshops for organizations like Jackson County 4-H. She also co-hosts the live cooking show, "The Davises Eat," on Facebook and YouTube, demonstrating accessible home cooking and cocktail mixing with a focus on local foods.
Education
Drawing on her background in media, marketing, and event planning, Niki actively participates in event committees and incorporates her practical experience into her teaching. She has taught tourism and event marketing, as well as event and destination management courses for over 20 years. Recognized for her commitment to education, Niki has received awards for mentorship and teaching excellence.
